The kyusu is the traditional Japanese teapot for green tea. Its wooden side handle, set at a right angle to the spout, is held in one hand: a simple turn of the wrist is all it takes to pour, without burning yourself.

The sharing pitcher receives the whole brew at once. The tea stops steeping and keeps the same strength from the first cup to the last, so every guest gets an identical cup of tea. The strainer, placed on the pitcher, holds back the leaves.

ā— Tenmoku glaze: one-of-a-kind reflections

The name tenmoku comes from the tea bowls that Japanese monks brought back from China in the Middle Ages. It refers to dark glazes that develop streaks and reflections during firing, reminiscent of fur or raindrops.

On the Ame set, the glaze blends bronze-green, cream and black tones, highlighted by a brown rim on each piece. This pattern is created in the kiln: the design varies slightly from one piece to another, making every set unique. Ame means ā€œrainā€ in Japanese, a nod to these streaks.

  1. Warm the teapot, pitcher and cups with hot water, then empty them.
  2. Place the leaves in the teapot and pour in water heated in a kettle: around 70–80 °C for Japanese green tea, 90–95 °C for black tea or oolong.
  3. Let it brew for the recommended time, then pour the whole infusion into the pitcher through the strainer.
  4. Serve the tea into the cups using the pitcher. You can re-steep the same leaves several times.
